3 Delicious Dinners You Can Make With Apples

How To Be The Apple Of Your Family's Eye

This is the best time of year to take advantage of nature’s harvest. That’s right, it’s apple season, and it seems like this year’s crop in North Conway is one of the tastiest we’ve had in a long time. Here are three delicious dinners you can create in no time using fresh apples and a little ingenuity.


  • 4 boneless, skinless chicken breasts
  • 2 ounces crumbled bleu cheese
  • 2 medium apples, peeled, cored and shredded
  • 1 small egg
  • 1-1/4 cup bread crumbs
  • Salt and pepper to taste


  1. Preheat the oven to 350 degrees.
  2. Form a pocket in the chicken breasts by making a small slit in the side with a sharp knife. Make sure you don’t cut all the way through.
  3. In a bowl, combine the remaining ingredients.
  4. Stuff each chicken breast pocket with the mixture, and secure with a toothpick.
  5. Grease a glass baking dish.
  6. Cover and bake for 20 minutes.


  • Pork Loin
  • 4 apples, peeled, seeded and cut up
  • 1 tablespoon cinnamon
  • ¼ cup water
  • Salt to taste


  1. Prepare a pork loin as usual.
  2. In a saucepan set on low, simmer the apples and cinnamon.
  3. Add ¼ cup water and mash up the apples.
  4. Simmer and mash until the apples are the consistency of sauce.
  5. Add salt to taste.
  6. Pour over pork loin and garnish with parsley.


  • 1 whole chicken
  • 3 medium apples, peeled, seeded and diced
  • 3 small onions, diced
  • 2 celery stalks, diced
  • 2 garlic cloves, minced
  • 2 TBL chopped sage
  • 1 TBL mustard
  • 1 tsp. thyme


  1. Preheat oven to 375 degrees.
  2. In a bowl, combine the remaining ingredients.
  3. Stuff the cavity of the chicken with the mixture.
  4. Tie the legs together with string.
  5. Rub the outside of the chicken with melted butter.
  6. Roast for 30 minutes or until done.
