Why Wood-Fired Ovens Are the Best

What makes cooking pizza in a wood-fired oven superior is the thick walls absorb heat, ensuring an even flow of heat both to the crust and toppings. That, combined with temperatures that exceed 500 degrees, helps to sear the outside of the pizza so that you get the desired lightness.

Pizzas cooked in a wood-fired oven only take a few minutes, but in that time they absorb the flavor of the wood smoke, which adds a rich and delicate taste to the toppings that cannot be achieved in any other way.

The Perfect Dough for the Perfect Pie

Traditional Neopolitan pizza dough uses neither sugar nor oil — it is just yeast, salt and flour. The secret to this dough is allowing the dough to rise for a long period of time so that the sugars in the flour convert and feed the yeast. The result is the very thin crust for which Italian pizza is famous.

At Stonehurst Manor, we use our own Manor made Pomodoro with imported tomatoes from Italy and our own hand-crafted mozzarella in our Signature Sourdough Pizzas.
