Chef Avi Presents: Spiced Cranberry Sauce
The perfect accompaniment for the Holiday Season. No Thanksgiving nor Christmas Dinner is complete without the quintessential Cranberry Sauce. Below Chef Avi shows you how easy it is to prepare at home, with fresh Cranberries, Orange & Ginger.

Spiced Cranberry Sauce
1/2 Cup Granulated Sugar
1/2 Cup Light Brown Sugar, firmly packed
1/2 Cup Water
2 Oranges, juiced (1/2 juice), and zested with a micro plane zester
16oz Fresh Cranberries
1 Cup Golden Raisins
1/4 Cup Grand Marnier, or your favorite orange liqueur
1 tsp Cinnamon, ground
1 small Nutmeg, grated (1tsp)
1 tsp Fresh Ginger Root, minced finely
Step 1: Pick over your Cranberries. Discard white, green or wrinkled ones, but color variation is fine.
Step 2: Rinse Cranberries and place into heavy bottom pot with Sugars, Water, Orange Juice and Zest.
Step 3: Over high heat bring quickly to a boil, and then immediately reduce to a simmer.
Step 4: Now add Raisins, Grand Marnier, Spices, Ginger and Salt.
Step 5: Cook for 10-15 minutes, stirring occasionally. (You want some of the cranberries to burst, to allow out the fruit’s natural pectin, which helps to thicken your sauce)
Step 6: Allow to cool, but can be served warm…will thicken more when cool. Store in airtight container in the refrigerator for up to a week.
